Sideways Meatballs


Ingredients:


1 lb ground beef

1 lb ground pork

3 cloves garlic, minced

2 eggs

1 cup grated parmesan/pecorino/romano cheese

1 tbl parsley, chopped

2 cup bread crumb

1/2 tsp dry oregano

1/2 tsp dry thyme

1 tsp Sideways Merlot craft salt

1/2 tsp black pepper








Directions:


Combine ground beef and pork in a bowl, leaving a well in the center.

Crack eggs and pour into the center well, mix thoroughly into the beef/pork mixture.

Add bread crumb, garlic, cheese, parsley, dry herbs, black pepper, and Sideways Merlot craft salt, mix well.

Pull roughly golf ball-sized pinches of meat mixture and roll into smooth, individual balls between the palms of your hands. Set aside.

Heat a large sauté or cast iron pan on high heat, add meatballs.

Cut heat to medium and cook meatballs in batches, rolling onto each side approx. 4-5 minutes per side.

Cook until the temperature of the meatballs 160 degree internally or if you cut one open and they are cooked all the way through.

Now toss in your favorite sauce and mozzarella cheese and bake, or add to pasta marinara for a spaghetti night!
