Ingredients: 1 cup "Bourbon" Craft Salt 1 qt. water 1/4 cup brown sugar 1 cinnamon stick, crushed 1 tsp mustard seeds 1 tsp black peppercorns 4 whole cloves 4 whole allspice berries 6 whole juniper berries 2 bay leaves, crushed 1/4 tsp ground ginger 2-4 lb. beef brisket, flat or point, trimmed of fat 1 tbl oil (vegetable, olive, etc.) 1 cup of your favorite Irish beer (we like Smithwicks personally) 1 cup beef or veggie stock 1 small onion, cut into quarters 2 carrots, peeled
