Citrus Ginger Panzanella

Ingredients: One loaf ciabatta or sourdough bread cut into approx. 1 1/2" pieces (many recipes call for stale bread, but we prefer toasted. You can save some money though, by buying the day old bread in the back of the store, were going to toast it anyway!) 4 fresh tomatoes, seeded & diced 1 small zucchini, diced 1/2 red onion, diced 2 cloves garlic, minced 1/4 cup fresh torn or rough chopped basil 2 tbls fresh chopped parsley 1/2 cup crumbled goat or feta cheese 2 tbls olive oil 2 tbls red wine vinegar Freshly ground or course ground black pepper to taste Steamboat Salt Co.
