Citrus Ginger Summer Panzanella
One loaf ciabatta or sourdough bread cut into approx. 1 1/2" pieces (many recipes call for stale bread, but we prefer toasted. You can save some money though, by buying the day old bread in the back of the store, you are going to toast it anyway!)
4 fresh tomatoes, seeded & diced
1 small zucchini, diced
1/2 red onion, diced
2 cloves garlic, minced
1/4 cup fresh torn or rough chopped basil
2 tbl fresh chopped parsley
1/2 cup crumbled goat or feta cheese
2 tbl olive oil
2 tbl red wine vinegar
Black pepper to taste
"Citrus Ginger" craft salt
Toss diced bread in olive oil, toast until crunchy, but still slightly soft. (we don't want croutons)
Mix herbs, veggies, and crumbled cheese.
Toss mixture with toasted bread, drizzle with olive oil and vinegar.
Salt and Pepper to taste.
Serve warm. Enjoy!
