Citrus Ginger Panzanella
One loaf ciabatta or sourdough bread cut into approx. 1 1/2" pieces (many recipes call for stale bread, but we prefer toasted. You can save some money though, by buying the day old bread in the back of the store, were going to toast it anyway!)
4 fresh tomatoes, seeded & diced
1 small zucchini, diced
1/2 red onion, diced
2 cloves garlic, minced
1/4 cup fresh torn or rough chopped basil
2 tbls fresh chopped parsley
1/2 cup crumbled goat or feta cheese
2 tbls olive oil
2 tbls red wine vinegar
Freshly ground or course ground black pepper to taste
Steamboat Salt Co. Citrus Ginger craft salt (or whichever you prefer) to taste
Toss diced bread in olive oil, toast until crunchy, but still slightly soft. (we don't want croutons)
Mix herbs, veggies, and crumbled cheese.
Toss mixture with toasted bread, drizzle with olive oil and vinegar.
Salt and Pepper to taste.
Serve warm. Enjoy!
